Tradition Valdobbiadene Prosecco: tradition in innovation

Three types of wine are available; Still, Semi-sparkling or Sparkling. Each wine can be 100% Prosecco or a blend of Prosecco and other local varieties. The wines can be produced as dry or sweet.

Due to the nature of the soil and the effect of the local climate, the wines are very different, offering a rage of subtle flavours.

Sparkling Prosecco is undoubtedly gaining in popularity throughout the world, emerging as one of the best loved sparkling wines; it has become the standard-bearer of winemaking in the hills of the Altamarca of Treviso.

The development of Prosecco owes much to the many important wine-producers of the area who have been key contributors in the development and refinement of the wine. A key contributor has been Carpene-Malvolti.

Prosecco is produced following the Charmat process, although particular innovation and development of this method has taken place to deliver the current evervescent sparkling wine with its fruity characteristics.

The DOC classification is very important to selecting quality Prosecco and refers to the 4,300 hectares registered for the production of Doc Prosecco di Conegliano e Valdobbiadene, yielding almost 40 million bottles of Doc bottles.

Over 35% of the total sales volume is for export, and the Prosecco Valdobbiadene DOC is known in more than 20 countries, from the Far East to northern Europe, as well as in North and South America.

Fasol Menin offers three vers ions of the Prosecco Valdobbiadene DOC

Extra Dry , with 15-20 grammes / litre residual sugar, is the “classic” Prosecco. It makes the perfect aperitif, and pairs well with vegetable soups, lightly-sauced pasta, seafood, white meats, and fresh cheese. The colour is a brilliant straw-yellow, and on the nose, the bouquet is fresh and complex, with hints of flowers and notes of apple, pear, and citrus fruit. On the palate it is velvety, dry and rich.

Brut , with lower residual sugar, is the epitome of sparkling wines. With more prominent bubbles and a very clean nose
